Prepare your space. Place a small sifter, the matcha, a chasen or small whisk, a tea bowl or wide cup, and the hot and cold water within reach. We begin with clarity and calm.
Sift the matcha into the tea bowl. We remove the clumps so the powder can bloom evenly. The motion is slow and patient. Observe the soft, verdant dust falling like spring rain.
Warm the bowl with a little hot water, then discard that water. Bring 120 ml of water to around 80 C. We are looking for small rising bubbles and steam that is gentle. Do not let it reach a violent boil. Treat the water gently so it treats the powder gently.
Add 120 ml of the hot water to the sifted matcha. Using the chasen, whisk with a quick, light motion in an M or W pattern until a fine foam forms on the surface. Listen to the whisking. The sound softens as the foam arrives. The aroma should be green, bright, and slightly sweet.
In a separate pitcher, combine the cold filtered water, honey or agave, and yuzu or lemon juice. Stir until the sweetener is fully incorporated. The gentle coolness will lift the citrus and balance the matcha's depth.
Pour the whisked matcha slowly into the pitcher with cold water. Watch the green swirl and settle. Add the ice cubes to your serving glasses. Pour the elixir over the ice, dividing evenly between two glasses.
